A lot that arrived at a sound moisture content can drift out of spec in a week in the wrong storeroom, and the flavour a roaster paid a premium for goes with it.

Most small and mid-size roasters store green in whatever space is cheap: a back corner, an unheated warehouse bay, a rented unit. Each of those swings with the Ontario seasons, and coffee stored in a space that swings loses quality faster than coffee held at a steady, slightly higher reading. The problem is not finding a number to hit; it is holding any number steady, which is exactly what an insulated room does and a leaky one cannot.

The 12.5% Line That Is a Food-Safety Line

There is one number every green-coffee storeroom is really built around, and it is not a quality preference, it is a safety limit. The European Coffee Federation’s code names 12.5 percent green-bean moisture as the ceiling above which the risk of ochratoxin A formation strongly increases, and states plainly that this level should not be exceeded anywhere. Ochratoxin A is a mould-produced food-safety hazard with legal moisture limits in major markets, roasted coffee itself is held below 5 percent in much of the EU, so keeping green beans dry is not fussiness, it is hazard control.

The Northern-Winter Trap

Cold alone does not protect the bean; stable, dry air does. That is precisely why an uninsulated dry box in an Ontario yard is not a green-coffee store, and an insulated one is.

The Climate-Holding Storeroom

For most Ontario roasters the honest recommendation is an insulated container, or a reefer run as a temperature-and-humidity holding box, because the whole point is dampening the daily and seasonal swings that drive condensation and moisture migration. The insulated envelope holds a stable band with a modest climate unit; racking keeps the pallets off the floor and away from the walls per the trade rules; and a datalogging hygrometer gives the roaster the record their quality control wants.
